Saxon Hotel, Villas and Spa is proud to host Mr. Laurent Delassus, Vice President of International Marketing of Opus One for a 4-course dinner on the 20th April 2018. Each course will be paired with Opus One wines.
At this occasion, Mr Delassus will share his unique insight into this legendary wine and also guide us through the winemaking and history of this prestigious winery. Opus One was founded by Baron Philippe de Rothschild, legendary proprietor of Château Mouton Rothschild, and renowned Napa Valley vintner Robert Mondavi. By combining the great winemaking traditions and innovations of both families, the founders’ singular goal was to create an exceptional wine in the heart of Napa Valley.

LAURENT-PERRIER GRAND SIECLE
100% Grands Crus. A blend of 3 outstanding years declared as vintage by Laurent-Perrier, chosen for their complimentary traits: one year for structure, one year for finesse and one year for freshness.
Aged in French oak, Overture is composed of the same five varietals that define Opus One: Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec. A timeless expression of our estate vineyards, Overture is a multi-vintage reflection of the winemaker’s artistry. Full bodied but approachable in its youth, Overture shows generous dark fruit aromas and flavours with a soft, supple mid-palate. As a fine wine, Overture will develop profoundly over time.
OPUS ONE 2007
Picture perfect until late August, the 2007 vintage posed an unusual challenge, with a heat spell in September followed by rains and the threat of frost. Selective harvesting (the majority at night) produced a vintage recalling the generous 2001, with aromas of cassis, nutmeg, raspberries, cola, fresh oats, dark chocolate and forest floor. Polished, supple and harmoniously precise, the 2007 fuses a seamless mid-palate with soft yet sinewy tannins. The wine will age effortlessly for decades.
OPUS ONE 2010
Aromas of fresh blackberry, rose petals, chocolate and espresso accentuate a profound tapestry of fruity and earthy nuances. Round velvety tannins enrobe a silky texture with a slight touch of minerality. The flavors of dark fruit are enhanced by the well integrated acidity. The acidity and tannin structure promise a very long life ahead for this wine.
OPUS ONE 2014
The 2014 Opus One exudes subtle aromas of fragrant florals, fresh garden herbs and forest floor that give way to a concentrated blend of red cherry, blackberry and black currant. After a silky entry, dark fruit flavors emerge with hints of baking spice and black olive. Fine-grained tannins offer a velvety texture and complex structure that builds to a long, vibrantly fresh finish with a touch of mocha. Enjoyable now, the wine will delight for years to come.
