Our third edition of Sixty Seconds of Saxon from Chef Jane-Therese’s kitchen at home is a recipe for Butternut Scones.

Equipment needed:

A Hand Beater
Two mixing bowls
A Cookie cutter

Ingredients:

½ cup soft brown sugar
1 tablespoon butter
1 free-range egg
1 cup roasted butternut mash
½ teaspoon salt
½ teaspoon cinnamon
2 cups self-raising flour
Extra flour

Method:

Combine and sieve all dry ingredients.
In a separate bowl beat the sugar and butter until smooth.
Add one egg into the sugar and butter; mix until creamy.
Add in your butternut and then your dry ingredients, folding together.
Lastly flour your work surface and shape dough to cut.

Bake at 200 degrees for 20 minutes.

This recipe makes 8 delicious Butternut Scones.
